Garden bounty: bay leaves drying

My bay leaf plant, which is only about 18 cm high, unlike the 2-metre bushes I read about, produces just the right amount of bay leaves for me, with a few to share around. They are wonderful – so much better than the store-bought ones, and the pungeant smell remains for a year or more in a tightly sealed jar. You have to break or rub them to get the smell, and then it’s a perfume you can’t get enough of! Soups, casseroles, sauces: I use it in them all.
